We, along with our community, are excited to be a part of this publication, which supports New London, Spicer and the Glacial Lakes Area in Central Minnesota.

Pan Seared Scallops, Grilled Shrimp and Mussel Special

This yummy pasta entree was one of the many chef inspired creations by Jayson Scott. Pan seared scallops, grilled shrimp and mussel’s carefully steamed in a white wine reduction. Served on a bed of linguini with a light and aromatic Alfredo sauce, garnished with fresh chiffonade spinach.

Just the other night I welcomed a repeat guest who commented on how wonderful this dish was and how he is looking forward to enjoying more yummy entrees at our historic Inn and Restaurant.

Our culinary team has been working hard to create a summer menu filled with local produce, meat and wine. The plan is simple – support local business – create an exciting new fare using fresh ingredients that our guests will enjoy in our one-of-a-kind atmosphere overlooking beautiful Green Lake. Our goal to provide a creative culinary fare coupled with exceptional customer service to provide a fun dining experience.

Starting May 22, 2012 we will be expanding our hours to include lunch and dinner service from 11:00 am to 9:00 pm, Tuesday through Saturday nights. You can dine-in or take-out – watch for dock pick-up service coming soon.

Be sure to check back soon, where we will be introducing our summer lunch and dinner dine-in our take-out menu along with our creative culinary and gracious hospitatlity staff.

Girl's Birthday Party at Spicer Castle Inn

 We were thrilled to welcome these little girls to our Inn for a special Birthday Party.  They were so adorable dressed up in their party dresses and they giggled outloud as the went  exploring through the “castle.”

When it comes to celebrating the most romantic  holiday of the year, there’s simply no more amorous way to woo your Valentine than with an exquisite dinner and cozy stay at a historic inn.  After all nothing says “I Love You” like a candlelit dinner for two and a romantic evening in a guestroom that features a double whirlpool tub and gas fireplace.

Does your sweetheart love chocolate and flowers?  You can add fresh flowers and chocolates from Mr. B’s Chocolates to your get-away.  Now that’s a Valentine’s Day to remember.

With Thanksgiving around the corner, I was thinking this evening why I am so thankful.  As a mom and grandmother, I am thankful for my amazing sons, grandsons and finally a granddaughter born on November 8th.  Does anyone know if they sell pink trucks?  Just kidding!   It is so much fun when my grandsons visit and ask for “nola bars” and “fuit nacks,” translated granola bars and fruit snacks.  Coloring pictures, playing ball and reading books are great past-times at my house.  I love to bake pies, breads, pastries and cakes and I plan to bake our family favorites: pumpkin, pecan and apple pies with enough left overs to send goodies home with my family.

As an innkeeper, I am thankful for our amazing staff that work so hard to make sure that each guest is met with gracious hospitality, clean rooms and great food.  Their dedication and extra effort to make sure that our guests enjoy their stay is outstanding, they are my extended family and I am so grateful.

I am very thankful for all the wonderful guests that we have had the privilege of welcoming to our historic country lake inn.  The highlight of innkeeping is meeting and getting to know our guests, just last week there was a couple celebrating their anniversary and I had so much fun helping the man plan a surprise vow renewal for his wife.  It is creating memories  that makes all the hard work that goes into innkeeping rewarding.  This isn’t just an old building with all its intricacies, it is a place where people celebrate life’s precious moments.   We had a dream of having people enjoy this piece of history and feel like they are home while visiting our bed and breakfast.

I hope you all have reasons to be thankful this year and remember the little things that make you smile.   I’ll really be smiling this year because my family is coming to my house and I get to prepare a feast; and I look forward to more great guest comments, maybe one from you!!!

November is a time for remembering our war heroes who have served their country.  The Blue Star Mother’s do a fantastic job of supporting our troops.  Here is a brief synopsis of the Blue Star Mother’s Organization.  It is a support through service organization.  There are members from all over the United States.  Moms joining together to share their pride, their devotion and their worries for our sons and daughters currently serving in all branches of the Armed Forces of the United States, and our sons and daughters who are now veterans.

These families volunteer their time and efforts to send care boxes to our troops, support families while loved ones are away, and provide fleece blankets for our veterans just to name a few of the loving ways this organization supports our troops.  I can imagine the love that a veteran feels when a member visits with a fleece blanket or the troops overseas who open a care box filled with items from home.

This will be our second annual fundraiser.  Last year we had so much fun sampling our great BBQ Ribs and who can resist the flatbread with garlic, melted cheese and assortment of fresh vegetables along with other favorite goodies to enjoy.  The children enjoyed telling Santa what they wanted for Christmas and the troops enjoyed getting their drawings that were included in the care boxes. 

This year I hope to get a caricature drawing  and fun photo with my family along with meeting you and your family when you stop by for a visit.  We are looking forward to welcoming you to our Open House Fundraiser filled with lots of laughs, fun and food at the Spicer Castle Inn, Monday, November 14, 2011 from 5:00 to 8:00 pm.

Looking for a spectacular driving route?  The Glacial Ridge Trail is a beautiful driving route that meanders through the prairie and woods that is absolutely gorgeous right now and hopefully will last another week.

While the weather is still nice a bike ride or hike on the Glacial Lakes State Trail or the 12 mile trail that follows around Green Lake would be quite refreshing.
